Pickles for CoG

I got my basic recipe from Food Network web site but have made adjustments to suit my taste.
These are spicey and garlicy.

Ingredients
• 15 pickling cucumbers
• I use the largest I can find. They must be fresh and very firm.
• If not, the end result will be unsatisfactory.
Pickling Liquid:
• 6 cups water
• 4 cups white vinegar
• 1/3 cup coarse salt
• 3/4 teaspoon ground cumin
• 1 teaspoon black peppercorns
• 1/2 teaspoon turmeric
• 2 whole cloves
• 1 bay leaf (optional)
• 1 large onion, sliced
• 1 stalk celery, chopped to expose surface area
• 12 serrano chiles, sliced with seeds
• 1 Large bulb garlic crushed
• 1 bunch dill but 2 is better
• 1 sprig thyme
Directions
Bring a large stockpot water to a boil. Add cucumbers, immediately remove from heat, and drain in a colander. Rinse with cold water and reserve.

Combine water and vinegar and salt in an appropriate pot and bring to a boil. Place cucumbers in the larger container that you blanched them in with all the vegetables and herbs.. Pour hot pickling liquid over cucumber mixture and let cool. Tap down solids until liquid rises to top. Cover with lid and let stand at room temperature 1 day. Transfer to a sealed container strain off the liquid into the jar, add another bulb of crushed garlic and another 12 chopped up serranos into the jar, and refrigerate 5 days before serving. Store indefinitely.

You can do this in the morning and put them in the fridge at night, or do them at night and let them sit overnight then put them in the fridge.
These will last forever in the fridge
IRemember, your pickles will only be as good as your ingediaents especially the cucumbers

Many times I have gone out to get the cucumbers to make a batch and have found less than perfect ones. I decide to not make them at all if that is the case.
